Buljol
Ingredients:
1/2 lb saltfish (salted cod)
2 large tomatoes, finely chopped
1 hot pepper, finely chopped
1 med onion, finely chopped
2 green onions, chopped
1 large avocado, chopped into cubes
3 tbsp olive oil
black pepper
juice of half a lemon
Preparation
1. Soak the fish in warm water and leave overnight.
2. Throw out the water in the morning. Fill pot with water, put fish in and bring to a boil.
3. Throw out water. Repeat until fish isn't salty anymore.
4. Shred the fish into small pieces
5. Squeeze the fish in your hand to take out all the water.
6. In a small bowl mix, tomatoes, pepper, onion and green onion
7. Mix in olive oil, lemon juice and black pepper to taste.
8. Mix in fish
9. Add avocado and gently mix
I like my dish with green banana but it can be eaten with toast or whatever you want.
Shredded codfish. Tear the fish apart with your hands after it's been soaked several times. Remember to squeeze it dry.
Take out the tomato pulp before chopping it into small pieces. If you don't, all that liquid you see will make your dish watery.
Chop your vegetables into chunks, except the onion. The onion should be finely chopped.
The final product.It was delicious. I made this for Sunday brunch. We ate it with boiled green banana.
